Deborah’s tip: I’ll tell you Marco, the kitchen surfaces are the most exposed to encrustations. This is because fats in contact with high temperatures polymerise, forming hard yellow-brown encrustations. At first, the market offered products with a strong abrasive action, mainly in powder form. Then, gradually, the surfaces changed and became more and more delicate and at this point cream or spray products arrived. These products are still a bit abrasive but more delicate because they have smaller granules; companies nowadays formulate them with calcium carbonate, oxides, or aluminium silicates. Of course Marco, there is effort to put in, but be careful to use specific products that are able to dissolve these types of dirt or grease and protect at the same time the surface. Another tip: be careful, always wear gloves because these products are very aggressive compared to classic generic detergents. Dear Marco, instead of using a thousand products, of course I recommend our barbecues and ovens cleaner.

Deborah’s Answer: Surfactants are molecules that are included in formulations because they help to dissolve dirt effectively; they are used as emulsifying and cleaning agents. It sounds trivial but 1) they help the water to spread better on the surface to clean, 2) they have an emulsifying effect i.e. they help the water to encapsulate the dirt, such as the grease is placed in the centre of the particle which keeps it in suspension where it has been removed; without surfactants the water would avoid the dirt and grease, 3) they help to remove the dirt, especially on specific surfaces (such as plastic) the mechanical action and its wetting effect help the dirt to lift and detach.

Deborah’s advice: The first step is to immediately wet the stains as a pre-treatment, in this way you avoid making them dry because otherwise they become more difficult to remove. The strongest ones contain proteins such as those from milk, eggs and cream, then there are those from blood and grass or the so-called ‘hard bones’ which are the stains from coffee, wine and Coca-Cola.

If they dry on the fabric, they fix even more and at this point a specific detergent must be used, containing an enzyme that dissolves these types of proteins and fats, making washing easier. Just spray it on the stains, leave it to act for a few moments and then put it in the washing machine for the final washing.
